finally had some interest from some other restaurants throughout the
country who are interested in offering a true vegetarian and vegan
alternative. This is, as you understand, a serious issue in the restaurant
scene. Either you are faced with a small number of choices or something
that is not really vegetarian, such as [some] Vietnamese food with beef broth,
fish sauce, and oyster sauce. Check is out sometime their idea of
vegetarian is something without big chunks of meat. I had to experiment
with the recipes to get soemthing that was legitimately vegetarian and
still tasted authentic.
I have been out trying to get other restaurants to try an alternative
menu and a resource day with promotional discount. Finally there is some
interest from some restaurants in Washington DC. We are conferring on the
alterations to their present recipes, dealing with preparation issues.
(Cutting Boards must be segregated, separate fryer for vegetarian,
separate steamers and blanchers must be used) as well as the most important
issue of employee training. They hope to be able to launch their own
Meatless Mondays? by the winter season.
